I have a few favorite recipes that I pull out frequently. One of them is Cooking Light’s Falafel with Avocado Spread, the magazine’s “All-Time Best Vegetarian Entrée.” The Southwestern-inspired recipe is simple to prepare and tastes amazing. My boyfriend claims it’s one of his favorite meals that I make.
I made the falafel the other day for a quick and healthy lunch. I didn’t have all of the ingredients on hand for the spread, so just used (a lot of) avocado, a squirt of fresh lemon juice and a dash of salt. It was still just as tasty. What’s not to love about pinto beans, cheese and avocado?
